Due to popular demand, here is the recipe to my mini taco bowls! roughly 100 cals each and totally filling
Ingredients:
1 pound ground turkey burger/ extra lean ground beef
1 packet of taco seasoning
can of black beans
1/4 cup of shredded cheese
24 wonton wraps
Start by cooking your ground meat and taco seasoning in a skillet until thoroughly browned. Then spray your muffin tin and preheat the oven to 375(min is a little larger, allowing my serving sizes to be a little bigger, it fits 12). After you've sprayed your tin, put two wonton wrappers in the tin, make sure that they overlap in a way that will keep the filling in it, the wrappers should hang over the top. Then, open and rinse your black beans well. evenly disperse 1/2 of the can in the 12 cups. Then, evenly disperse the cooked meat. At this point, you'll put the cups in the oven until the edges of the wonton wraps get a lite tan and start to bubble. Take the tin out and disperse 1/4 cup cheese over the 12 cups ( you might want to add a little more but if your watching calories, 1/4 is plenty). Then place the tin back in the oven until the cheese is melted and the wonton wrappers are a little crispy. (its important to make the wrappers crispy so the bottoms aren't mushy) It should be in the oven for 15-17 minutes total. Take them out and the cups should just pop right out!
I've done the math and its about 100 calories for each cup, of course this depends on what meat and what cheese you use. but regardless, you can have about three and know that you're staying under 500 cals for a filling delish meal!
